The Callebaut Callets Milk are designed for melting and have a balanced milk, cocoa and caramel taste. The callets contain 33,6% and are made from the finest Belgian chocolate. Suitable to made bonbons or chocolate. But also perfect for glazing your cupcake or cookie.
How to temper this chocolate :Pour some Callets into a plastic or glass bowl and put the bowl into the microwave. Melt the Callets at 800-1000W. Take the Callets out of the microwave every 15 to 20 seconds and stir well. Repeat this procedure until some small pieces of Callets are still visible in the bowl. Mix the chocolate well until all the pieces of Callets are melted.Take a sample: dip the tip of a knife into the chocolate. It should set evenly within 3-5 minutes at the ambient temperature ( ± 20°C).

Due to different temperatures, the callets may melt in transit. They still can be used but they may not arrive in the original wafer shape. Follow the regular instructions on the package to process the Callets.
